TRUTHS AND FALSEHOODS

•All vegetable fats are equally beneficial: FALSE


The belief has spread widely that since all animal fats are saturated, all vegetable fats are unsaturated.

Some oils, such as palm or coconut oil, contain saturated fats although they are of vegetable origin. Fats that diminish the risk of high cholesterol levels are the kind found in virgin and extra virgin olive oil. These are known as monounsaturated fats.

Polyunsaturated fats increase the risk of cardiovascular problems.


•The higher the acidity of an olive oil, the better its flavor: FALSE


After much debate, the conclusion has been reached that acidity is not a factor in the intensity of an oil's flavor. Acidity level is simply a chemical fact, and as such, there are oils that have low acidity as well as intense flavor.


•Virgin olive oil contains vitamins A, D, E and K: TRUE


This is the oil that provides the most vitamins to our body.


•Virgin olive oil favors the development of the brain and

nervous system, as well as bone growth: TRUE


Olive oil acts on the body, providing it with energy.
